Extrusion Cooking Technology on Food Industry (Turkish with English Abstract)

Abstract

Extrusion cooking technology has got widening group of industrial applications and has been used extensively during recent years. One of the industrial applications of this technology is also food process industry. With this technology; products with high quality and any number of variety are produced. In this study, principles, usage aims of extrusion cooking technology; extruder systems, their specifications, advantages and disadvantages were described.

Abstract

Ekstruzyonla işleme teknolojisi geniş bir uygulama alanına sahiptir ve son yıllarda da yaygın bir şekilde kullanılmaktadır. Bu teknolojinin uygulama alanlarından birisi de gıda işleme endüstrisidir. Bu teknikle, yüksek kaliteli ve çeşit olarak daha fazla sayıda ürün üretilmektedir. Bu çalışmada; ekstruzyonla işleme teknolojisinin esasları, kullanım amaçları; kullanılan ekstruder sistemleri, özellikleri, avantajları ve dezavantajları açıklanmıştır.
