Abstract

In this review a significant and important data regarding the terminology of some significant stabilizer substances used as additives in dairy industry, the structure and chemical properties of them, their doses in usage and the other properties of them is given.

Abstract

Bu derlemede, süt endüstrisinde katkı maddeleri olarak kullanılan bazı önemli stabilizatör maddelerinin terminolojisi, yapısal ve kimyasal özelliklerine, kullanım miktarları ve özelliklerine ilişkin bilgiler verilmektedir.
