Abstract

In the last years the production of brined grape leaf has increased in our country. And it is observed that the grape leafs are exported to the middle east countries. So, it is necessary to increase the researches on brined grape leafs. In this study, the effects of different leafs. In this study, the effects of different leaf and brines on brined grape leaf quality have been investigated.

Abstract

Ülkemizde son yıllarda salamura yaprak üretimi artmıştır. Ayrıca son zamanlarda salamura yaprakların ortadoğu ülkelerine ihraç edildiği de gözlenmektedir. Bu nedenle salamura yaprak yapımı üzerindeki araştırmaların arttırılması ve standart bir üretim yönteminin belirlenmesi gerekmektedir. Çalışmamızda farklı yaprakların ve tuz konsantrasyonunun salamura yaprak kalitesine etkisi üzerinde durulmuştur.
