Abstract

This study discusses all aspects of carotenoids, pro-vitamin A activity, antioxidant properties and effects of carotenoids on the human health. Also extraction methods of carotenoids are outlined.

Bu derlemede, karotenoid grubu maddelerin genel özellikleri, A vitamini etkinliği, antioksidant özellikleri ve insan sağlığı üzerine etkileri konusunda yapılan araştırmalar özetlenmiş ve ekstraksiyon yöntemleri hakkında genel bilgi verilmeye çalışılmıştır.
