Retentate Süt, Permeate ve UF Retentate Peyniraltı Suyunda Bakteriyofaj Aranması Üzerinde bir Araştırma

Abstract

Bu çalışmada Ultrafiltrasyon ile elde edilen retentate, permeate ve UF retentate ile yapılan peynirin peyniraltı suyundaki fajların 5 adet laktik asit bakterisi üzerindeki etkileri araştırılmıştır. Deneme materyalinde S. thermophilus ve L. bulgaricus’u lize eden faja rastlanmamış, ancak S. lactis, S. cremoris ve S. diacetylactis üzerine etkili fajların varlığı gösterilmiştir.
