Investigation of Bacteriophages in Milk Retentate, Permeate and UF Whey Retentate (Turkish with English Abstract)
Abstract
In this research, presence of bacteriophages active against 5 different lactic acid bacteria in UF retentate, permeate and UF retentate whey have been examined. While no bacteriophage of S. thermophilus and L. bulgaricus have detected in all samples, phages active against to S. lactis, S. cremoris and S. diacetylactis were found in some samples of materials

Abstract
Bu çalışmada Ultrafiltrasyon ile elde edilen retentate, permeate ve UF retentate ile yapılan peynirin peyniraltı suyundaki fajların 5 adet laktik asit bakterisi üzerindeki etkileri araştırılmıştır. Deneme materyalinde S. thermophilus ve L. bulgaricus’u lize eden faja rastlanmamış, ancak S. lactis, S. cremoris ve S. diacetylactis üzerine etkili fajların varlığı gösterilmiştir.
