Abstract

Food enrichment can be important intervention procedure for improving or maintaining the nutritional quality of the food supply. Much depends in a knowledge of the local situation in terms of nutrient needs, food consumption patterns and food processing and distribution.

Abstract

Besin zenginleştirilmesinin temel amacı çeşitli nedenler ile besinlerden kaybedilen besin elementlerini yerine koymak ve besinlere daha fazla besin öğesi ekleyerek beslenme yetersizliği sorunlarını önlemeye çalışmaktır. Eklenen miktarların kontrolü, zenginleştirilmiş besinin tüm tüketicilere ulaştırılmasının sağlanması ve işlem sırasındaki kayıplarının önlenmeye çalışılması zenginleştirmede beklenen yararların sağlanabilmesi için önemlidir.
