Abstract

By-products that are obtained in the processing of milk are very important amounts. These by-products especially have been obtained in cheese and butter manufacturing. Recovering of these by-products is essential for our national economy and environmental pollution. In this work, different recovering methods and using of dairy by-products in different processes were compiled.

Abstract

Sütün ürünlerine işlenmesinde elde edilen yan ürünler çok önemli miktarlardadır. Bu yan ürünler özellikle peynir ve tereyağı imalatı sonucunda ortaya çıkmaktadır. Bu ürünlerin geri kazanımı ülke ekonomisi ve çevre kirliliği açısından büyük önem arz etmektedir. Bu çalışma­da, sütçülük yan ürünlerinin yeniden işlenerek geri kazanım yöntemleri ve kullanıldıkları farklı alanlar derlenmiştir.
