A Research on Cheese Drying Methods (Turkish with English Abstract)

Abstract

Cheese drying is used in some countries in Europe for extending shelf life, reduction in volume and providing ease of handling in industry. In this study, some cheese drying methods given in literature were summarized. At the same time, a short information about advantages, disadvantages, and potential uses of dried cheese products was given.

Abstract

Peynir kurutma, peynirin raf ömrünü uzatmak, hacim azaltmak ve sanayide kullanımını kolaylaştırmak için bir çok Avrupa ülkesinde uygulanmaktadır. Bu çalışmada kaynaklarda yer alan bazı peynir kurutma metotları özetlenmiştir. Aynı zamanda kurutulmuş peynir ürünlerinin avantajları, dezavantajları ve kullanım yerleri hakkında kısa bilgi verilmiştir.
