In this study analysis of dry matter, total sugar, ash, total acid, volatile acid, pH, ethyl alcohol and methyl alcohol were carried out on bozas supplied from different markets in İzmir. The results reviewed to the boza standard of Turkish Standards Institution.
Araştırmada İzmir ilinde farklı satış yerlerinden sağlanan bozalarda kuru madde, toplam şeker, kül, genel asit, uçar asit, pH, etil alkol ve metil alkol analizleri yapılmıştır. Elde edilen sonuçlar TSE Boza standardına göre irdelenmiştir.
