Kırmızı Et Tüketimi, Kolesterol ve Beslenme

Abstract

Öz

Amaç: Son yıllarda insanlar beslenmelerine daha fazla dikkat etmekte, sağlıklı ve dengeli beslenmeye özen göstermektedir. Kan kolesterolünün ve serum lipitlerinin yükselmesi kalp-damar rahatsızlıkları gibi önemli sağlık sorunlarından biridir. Günümüzde hayvansal ürünlerin ve özellikle et ürünleri tüketiminin; kolesterolü yükselttiği hakkında yazılı ve görsel basında hatta bilimsel literatürde bilgiler bulunmaktadır. Kırmızı etler özellikle esansiyel yağ asitleri, demir, magnezyum, çinko gibi mineraller ve B vitamini bakımından yeterli ve 12 dengeli beslenmek için vazgeçilmez gıdalardır. Hipertansiyon, sigara ve alkol kullanımı, şeker hastalığı, ileri yaş, stres ve düzensiz yaşam, şişmanlık, fiziksel aktivite azlığı gibi birçok gıda dışı faktörün aslında kolesterolü arttırıcı etkisi bulunmaktadır. Bu derlemede et ürünleri tüketiminin serum kolesterol düzeyi üzerine etkisi tartışılmıştır.

Abstract

Abstract

Objective: In recent years, people pay more attention to their nutrition and pay attention to a healthy and balanced diet. Elevated blood cholesterol and serum lipids are one of the major health problems such as cardiovascular disorders. Today, the consumption of animal products and especially meat products; There is information about increased cholesterol in written and visual media and even in scientific literature. Many nonfood factors such as hypertension, smoking and alcohol use, diabetes, advanced age, stress and irregular life, obesity, and lack of physical activity actually have cholesterol-increasing effects. In this review, the effect of consumption of meat products on serum cholesterol levels was discussed.
