Mycotoxins and Their Importance in Terms of Public Health

Abstract

A moldy food is also the problems that threaten human and animal health. Molds are very commonly found in
nature and considered important agricultural products, which also cause problems with contaminants along with finished
products. The metabolites that can cause serious health problems, both economic and molds are mycotoxins. Mycotoxins
are secondary metabolic products are toxic to humans and animals. Statements occuring after ingestion of food containing
mycotoxins are mycotoxicosise. There are many effects of mycotoxins, hepatotoxic mycotoxins, dermatotoxic, neurotoxic,
mutagenic, carcinogenic, teratogenic, estrogenic vs.

Abstract

İnsan ve hayvan sağlığını tehdit eden sorunlardan biri de küflü gıdalardır. Küfler doğada çok yaygın olarak bulunan ve
tarımsal ürünler ile birlikte işlenmiş, işlenmemiş ve yarı işlenmiş gıda maddelerinde de sorunlara neden olan önemli
kontaminantlardan sayılmaktadır. Küflerin hem ekonomik hem de ciddi sağlık sorunlarına neden olan metabolitleri ise
mikotoksinlerdir. Mikotoksinler insan ve hayvanlar için toksik olan sekonder metabolizma ürünleridir. Mikotoksinleri içeren
gıdaların alınması sonucu insan ve hayvanlarda meydana gelen sağlık problemleri mikotoksikozis olarak tanımlanmaktadır.
Mikotoksinlerin hepatotoksik, dermatoksik, nörotoksik, mutajenik, kanserojenik, teratojenik, östrojenik gibi birçok etkileri
bulunmaktadır.
