Sustainability of Local Gastronomic Heritage: A Qualitative Field Study on Diyarbakır Culinary Culture

Abstract

The sustainability of local culinary heritage has become an increasingly important issue within the fields of gastronomy and tourism due to globalization, changing consumption patterns, and the growing prevalence of convenience foods. This study aims to evaluate Diyarbakır culinary culture from the perspective of sustainable gastronomy, identify local residents' views regarding the preservation of traditional dishes, and reveal the gastronomic tourism potential of the destination. A qualitative research approach employing a phenomenological design was adopted. Data were collected through semi-structured face-to-face interviews conducted with 100 participants residing in Diyarbakır and possessing knowledge of local culinary traditions. The data were analyzed using descriptive and content analysis techniques. The findings demonstrated that participants perceived Diyarbakır cuisine as an essential component of cultural identity characterized by rich culinary diversity, traditional cooking techniques, and distinctive flavor profiles. Participants also emphasized that several traditional dishes are becoming less visible in contemporary food practices due to changing lifestyles and intergenerational shifts in eating habits. Furthermore, gastronomy tourism was regarded as an important opportunity for promoting local culinary heritage and supporting regional development. The study highlights the significance of cultural transmission, community participation, and institutional support in ensuring the sustainability of local cuisines. The findings contribute to the sustainable gastronomy literature by emphasizing the socio-cultural dimensions of culinary heritage preservation.
