Mutfakta Bilgi Paylaşımı: Planlı Davranış ve Sosyal Değişim Teorileri Yaklaşımları

Abstract

Bu çalışma, yiyecek içecek işletmelerinde çalışan şeflerin mesleki bilgi ve deneyimlerini meslektaşlarıyla paylaşma durumlarını planlı davranış ve sosyal değişim teorileri perspektifinden incelemeyi amaçlamaktadır. Bilgi paylaşma davranışını etkilediği düşünülen faktörler olarak kişisel çıktı beklentisi, bilgi kaybı beklentisi, karşılıklılık beklentisi ve bilgi paylaşımına yönelik tutum arasındaki ilişkiler araştırılmıştır. Ayrıca, tutumun bu faktörler üzerindeki aracılık etkisi de test edilmiştir. Rastgele ve kartopu yöntemleriyle seçilen 267 şefin katıldığı çalışmada, bilgi paylaşımı tutumunu ölçmek için çeşitli ölçekler kullanılmış ve veriler anket aracılığıyla toplanmıştır. Sonuçlar, kişisel çıktı beklentisi ve karşılıklılık beklentisinin bilgi paylaşımına yönelik tutumu pozitif ve anlamlı şekilde etkilediğini, ancak bilgi kaybı beklentisinin bu tutumu negatif ve zayıf düzeyde etkilediğini göstermiştir. Bilgi paylaşımına yönelik tutumun bilgi paylaşma davranışını güçlü bir şekilde pozitif etkilediği tespit edilmiştir. Aracılık testleri, bilgi paylaşımına yönelik tutumun kişisel çıktı beklentisi ile bilgi paylaşma davranışı arasında kısmi tamamlayıcı bir aracılık rolü oynadığını, bilgi kaybı beklentisi ile bilgi paylaşma davranışı arasında rekabetçi (kısmi aracılık) rolü oynadığını ve karşılıklılık beklentisi ile bilgi paylaşma davranışı arasında kısmi tamamlayıcı bir aracılık rolü oynadığını ortaya koymuştur. Araştırma bulguları, şeflerin bilgi paylaşma davranışlarını tahmin etmede Planlı Davranış Teorisi ve Sosyal Değişim Teorisinin açıklayıcı etkisini doğrulamış ve bu konuda stratejik öneriler sunmuştur.

Sharing Knowledge in the Kitchen: Theories of Planned Behavior and Social Change Approaches

Abstract

This study aims to examine the professional knowledge and experience sharing behavior of chefs working in food and beverage establishments from the perspective of planned behavior and social exchange theories. The relationships between factors thought to influence knowledge sharing behavior, such as personal outcome expectation, knowledge loss expectation, reciprocity expectation, and attitude towards knowledge sharing, were investigated. Additionally, the mediating effect of attitude on these factors was tested. The study involved 267 chefs selected through random and snowball sampling methods, utilizing various scales to measure knowledge sharing attitudes, with data collected through surveys. Results indicated that personal outcome expectation and reciprocity expectation positively and significantly affected attitudes towards knowledge sharing, while knowledge loss expectation had a negative and weak effect on this attitude. Attitude towards knowledge sharing was found to strongly and positively influence knowledge sharing behavior. Mediation tests revealed that attitude towards knowledge sharing played a partial complementary mediating role between personal outcome expectation and knowledge sharing behavior, a competitive (partial mediating) role between knowledge loss expectation and knowledge sharing behavior, and a partial complementary mediating role between reciprocity expectation and knowledge sharing behavior. The research findings confirmed the explanatory effect of the Theory of Planned Behavior and Social Exchange Theory in predicting chefs' knowledge sharing behaviors and provided strategic recommendations in this regard.
