Hasat Sonrası Sıcak Su Uygulamalarının Hünnap (Ziziphus jujuba Mill.) Meyvelerinin Kalite ve Depolanabilirliğine Etkileri

Abstract

Hünnap, üretimin giderek artmasına bağlı olarak yeni depolanmaya başlayan bir meyve türüdür. Ancak, başarılı bir depolama için hasat öncesi ve sonrası bazı uygulamaların hünnap meyvelerinin depolanabilirliğine etkisinin ortaya konması gerekmektedir. Bu çalışmada, sıcak su uygulamalarının hünnap meyvesinin hasat sonrası kalite değişimlerine ve kayıplara etkilerinin araştırılması amaçlanmıştır. Geç sezonda, ticari olgunlukta hasat edilen hünnap meyveleri, 3 dakika süreyle 47°C ve 53°C sıcak suya daldırılmış ve 10 saniye 60°C sıcak su püskürtülmüştür. 3 dakika 24°C’deki suya daldırılan meyveler kontrol olarak kabul edilmiştir. Hünnap meyveleri 0°C sıcaklık ve %90-95 oransal nemde 80 gün süreyle depolanmıştır. Depolama öncesinde ve 20 gün aralıklarla alınan meyve örneklerinde kalite değişimleri incelenmiştir. Sıcaklık uygulamaları, 60 günlük depolama sonrası fizyolojik bozukluk oranını kontrole göre azaltmıştır. 80 günlük depolama sonrası 3 dakika 53°C sıcak su uygulamasında bozukluk oranı %16 iken, diğer uygulamalarda bu oran %35’in üzerinde olmuştur. Depolama sonunda, başlangıca göre hünnap meyvelerinde de yeşil renk (a*) tonu, suda çözünür kuru madde, titre edilebilir asitlik, sertlik miktarı ve antioksidan aktivitesi azalırken, sarı renk (b*) tonu ve ağırlık kaybı artmış, pH değeri ve toplam fenol madde miktarındaki değişimler ise sınırlı olmuştur. Sonuçlar, 3 dakika 53°C sıcak su uygulanan hünnap meyvelerinin 80 gün, kontrol ve diğer sıcak su uygulamalarında ise 60 gün süreyle başarıyla depolanabileceğini göstermiştir.
