RESTORAN MÜŞTERİLERİNİN SAĞLIK BİLİNCİNİN SAĞLIKLI YEME DAVRANIŞINA ETKİSİ

Abstract

Dışarıda
yemenin yaygınlaştığı, ne yenilip içildiğinin tam olarak da bilinemediği ve
sağlık sorunlarının da arttığı günümüzde sağlıklı yeme, sağlık bilincinin bir
türevi haline gelmektedir. Bu çerçevede; restoran müşterilerinin sağlık
bilincinin sağlıklı yeme davranışına etkisini ortaya koymak üzere bir araştırma
yapılmıştır. Tanımlayıcı türde tasarlanan araştırmada veriler, literatürden
yararlanılarak geliştirilen bir anket ile toplanmıştır. Evreni, tüm tüketiciler
oluşturmakla birlikte; çalışma evreni, Kayseri’de ayda en az bir kez dışarıda
yemek yeme alışkanlığında olan, 20-64 yaş aralığındaki bireyler olarak
tanımlanmıştır. Anket, kota örneklemesi esasına göre 01 Kasım 2016 ile 31 Ocak
2017 tarihleri arasında, anketörler aracılığıyla yüz yüze uygulanmıştır.
Geçerli kabul edilen 551 anketin verileri, tanımlayıcı istatistiklerin yanı
sıra, faktör ve regresyon analizine tabi tutulmuştur. Sağlık bilinci, pozitif
ve negatif sağlık bilinci şeklinde iki boyutlu bir yapı sergilerken, sağlıklı
yeme davranışı tek boyutlu bir yapıdır. Pozitif sağlık bilincinin sağlıklı yeme
davranışını, olumlu yönde olmak üzere, negatif sağlık bilincine kıyasla daha
fazla etkilediği ortaya çıkmıştır. Araştırma, sağlık bilinicinin ailede
verilmeye başlanması, bunun eğitim yıllarında pekiştirilmesi ve medyanın
etkileyici gücünden yararlanılması önerisi ile son bulmaktadır.
