Nitrate and Nitrite Levels in White Cheese Sold in Konya City

Abstract

Nitrate and nitrite contents in total 60 White cheese samples purchased from markets in Konya between 1994-2000 years were determined. The nitrate and nitrite contents of cheese samples respectively changed from 4.66 and 0.00, to 37.00 and 2.40 mg/kg. All samples had nitrate and nitrite levels inside the legal limits (according to Regulation Turkish Food Codex). The quantity of nitrate and nitrite in White cheese samples not carries potential risk for the health of humans.

Konya’da Satılan Beyaz Peynirlerin Nitrat ve Nitrit İçerikleri

Abstract

1994 ile 2000 yılları arasında Konya’da satılan toplam 60 Beyaz peynir örneğinde nitrat ve nitrit değerleri belir-lenmiş. Peynirlerin nitrat içeriği 4.66 ile 37.00 mg/kg, nitrit içeriği ise 0.00 ile 2.40 mg/kg arasında değişmiştir. Peynir örneklerinin nitrat ve nitrit içerikleri Gıda yönetmeliğinde belirtilen maksimum değerin ve insanlar için toksik sınırların altında bulunmuştur. Yani sağlık yönünden ve kanuni yönden herhangi bir sakınca söz konusu değildir.
