Investigation of Drying Characteristics of Thin Layer Drying of Potato (Solanum tuberosum)

Abstract

In this study the drying characteristics of potato which is grown Niğde region for different air temperature and pre-treatments were determined. In the trials, air temperatures as 60 0C, 70 0C, 80 0C and air velocities as 2.0 m/s were taken. Potato samples that cut at dimensions 20x10x4 mm, 12.5x12.5x12.5 mm and 25x12.5x12.5 were dried.. In the trials result, drying coefficient (k) values for samples of potato were found 1,959…3.691 (20x10x4 mm); 0,791…1.232 (12.5x12.5x12.5 mm); 0,573…0,854 (25x12.5x12.5 mm) respectively.

Abstract

Bu çalışmada, Niğde Bölgesinde yetiştirilen patatesin (Solanum tuberosum) farklı hava sıcaklığı ve ön işlem şartla-rında gösterecekleri kurutma karakteristiklerinin belirlenmesi amaçlanmıştır. Denemelerde hava sıcaklığı 60, 70 ve 80 oC, hava hızı ise 2.0 m/s olarak seçilmiştir. Patates örnekleri, kurutma öncesi ön işlem olarak 20x10x4 mm, 12.5x12.5x12.5 mm ve 25x12.5x12.5 mm boyutlarında kesildikten sonra kurutulmuşlardır. Denemeler sonucunda, pata-teslere ait kuruma sabiti (k) değerleri 20x10x4 mm boyutundaki patates örneklerinde 1,959 ile 3.691, 12.5x12.5x12.5 mm boyutundaki patates örneklerinde 0,791 ile 1,232 ve 25x12.5x12.5 mm boyutundaki patates örneklerinde 0,573 ile 0,854 arasında bulunmuştur.
