Determination of Dimethyl Sulfite in Pickling Capers (Capparis spp.) Flower Buds
Abstract
The flower buds at three different size ( x <= 8 mm, 8 < x <= 13 mm and x > 13 mm) of Capparis spinosa L. var. spinosa and Capparis ovata Desf. var. canescens (Coss.) Heywood were pickled in brine contained 15% salt for two months. Dimethyl Sülfite contents of the flower at three different size of both species were determined via gas chromatography. Highest DMS contents were established at small buds of both species.
