Fast-food restoranlardaki gıda israfının planlı davranış teorisi kapsamında incelenmesi: Ankara örneği

Abstract

Gıda israfı, günümüzde küresel bir sorun haline gelmiş olup çevresel, ekonomik ve sosyal sonuçlara neden olan önemli bir mesele olarak öne çıkmaktadır. Sürdürülebilir tüketim ve üretim hedeflerine ulaşmak için bu soruna karşı etkin çözümler geliştirilmesi gerekmektedir. Özellikle fast-food restoranlarda gıda israfı, toplam gıda kaybı ve atığının önemli bir bileşeni olup hem gıda güvenliği hem de kaynak sürdürülebilirliği açısından önemli bir rol oynamaktadır. Bu çalışmanın amacı, fast-food restoranlarda meydana gelen gıda israfının Planlı Davranış Teorisi (PDT) kapsamında incelenmesidir. Araştırma evrenini Ankara’daki fast-food restoran müşterileri oluşturmaktadır. Verilerin elde edilmesinde kolayda örneklem metoduyla anket tekniğinden yararlanılmıştır. Anketler 10 Temmuz - 20 Ağustos 2023 tarihleri arasında çevrim içi ve yüz yüze toplanmış ve elde edilen 270 anket analize tabi tutulmuştur. Araştırmada değişkenlere yönelik hipotezlerin test edilmesi için Smart PLS 4 istatistik programı kullanılmış ve verilerin çözümlenmesinde Yapısal Eşitlik Modeli’nden (YEM) faydalanılmıştır. Sonuçlara göre araştırmaya katılan bireylerin gıda israfına yönelik tutumunun, öznel normunun ve algılanan davranışsal kontrolünün davranışsal niyet üzerinde pozitif yönlü anlamlı bir etkisinin olduğu tespit edilmiştir. Ayrıca araştırmanın sonuçları doğrultusunda literatüre katkı sağlayacağı düşünülen çeşitli öneriler geliştirilmiştir.

Examination of food waste in fast-food restaurants within the framework of planned behavior theory: the case of Ankara

Abstract

Food waste is a global issue with severe environmental, economic, and social consequences. Developing effective solutions to achieve sustainable consumption and production goals is increasingly necessary. Food waste in fast-food restaurants, in particular, contributes significantly to total food waste and loss, thereby playing a crucial role in food safety and resource sustainability. The aim of this study is to investigate food waste in fast-food restaurants using the Theory of Planned Behavior (TPB) framework. The survey technique was used to collect data through a convenience sampling method of fast-food restaurant customers in Ankara. The surveys, collected online and face-to-face between July 10 and August 20, 2023, analyze 270 surveys. Smart PLS 4 statistical program tested hypotheses for the research variables, and the data was analyzed using a Structural Equation Model (SEM). In this context, the research determined that attitude towards food waste, subjective norms, and perceived behavioral control have a significant positive impact on the behavioral intention based on the individuals who participated in the study. Additionally, in line with the results of the research, various suggestions have been developed that are thought to contribute to the literature.
