Abstract

Günümüzde hastalıkların tedavi masraflarının oldukça yüksek olması, nüfusun hızla yaşlanması gibi nedenler, gıda ve sağlıklı yaşam konusunda toplum bilincinin oluşmasını sağlamıştır. İncir (Ficus carica L.), Türkiye ekonomisinde önemli paya sahip fonksiyonel gıdalardan biridir. Meyveleri ve incir sütü insan sağlığı açısından zengin mineral madde ve güçlü antioksidan içerir. İncir sütü, ağacın genç dallarından ve ham meyvenin koparılmasıyla akan beyaz renkli süt görünümünde bir sıvıdır. Başta tıp olmak üzere farklı kullanım alanları mevcuttur. Ancak ülkemizde insan sağlığı açısından önemi tam olarak bilinmediğinden yeterince tüketilmemektedir. Bu derlemede, incir sütünün bilinmeyen yönleri ve farklı kullanım alanları ile ilgili daha önce yapılmış olan çalışmalara yer verilmiştir.

Abstract

Today; reasons such as the high treatment costs of diseases and the rapid aging of the population have led to a public awareness about food and healthy life. Fig (Ficus carica L.) is one of the functional foods that has an important share in the Turkish economy. Its fruits and fig milk contain rich mineral substances and powerful antioxidants for human health. Fig milk is a liquid in the form of milk of white color, flowing from the young branches of the tree and by plucking the raw fruit. There are different uses, especially for medicine. However, in our country, it is not consumed enough because its importance is not fully known in terms of human health. In this review, previous studies on unknown and different uses of ficin have been included.
