Bioactive Components of Goat Milk

Öz

Researches related to the bioactive food components has gained new dimensions with the development of human health knowledge and the development of technology and techniques. With respect to this, further research has found area about biologically active substances and their functions found in foods in recent years. Although bioactive components are more commonly in plant-derived foods, animal origin foods are also available. Conclussion: Milk is of the dairy foods which has an important place of animal origin. It is the most adequate and balanced food and is an important part of the human nutrition for necessary nutrients. In our country milk is obtained from cows, sheep, goats and buffalos, as well as in other countries, but cow’s milk production ranks first. In general, besides the fact as we know the specific benefits of milk, there are advantages of goat milk proven by scientific research.

Öz

Özbilgi/Amaç: Gıda bileşenlerinin insan sağlığına yönelik fonksiyonlarına ilişkin yapılan araştırmalar bilgi, teknik ve teknolojinin gelişmesiyle farklı boyutlar kazanmıştır. Bu açıdan değerlendirildiğinde gıdalarda bulunan biyolojik aktif maddeler ve fonksiyonları son yıllarda daha fazla araştırma alanı bulmuştur. Biyoaktif bileşenler bitkisel kaynaklı gıdalarda daha yaygın bulunmakla birlikte hayvansal kaynaklı gıdalarda da bulunmaktadır. Sonuç:Hayvansal kökenli gıdalar arasında önemli bir yere sahip olan süt, insan beslenmesinde gerekli olan besin maddelerinin önemli bir kısmını en yeterli ve dengeli oranda içeren besindir. Ülkemizde süt inek, koyun, keçi ve mandadan elde edilmesinin yanı sıra diğer ülkelerde olduğu gibi inek sütü, üretimde ilk sırayı almaktadır. Genel anlamda sütün bildiğimiz yararlarının yanında keçi sütünün bilimsel araştırma ve gerçeklerle belirlenmiş üstünlükleri bulunmaktadır.
