Effect of Food Additives on Health

Abstract

Nutrition is the most basic need for all living things to survive. The increasing world population from past to present has brought about changes in eating habits. The increase in the global demand for easily accessible, easy to consume and low cost foods has also led to the development and change of the food industry. In parallel with the changing consumer needs, the production of foods resistant to oxidative and microbial spoilage has accelerated the use of food additives.Food additives are substances that are deliberately added in order to extend the shelf life of foods while maintaining the quality standards, to bring their sensory properties to the desired state of the consumer and to increase the variety of food. Researching the use of food additives in the food industry is an important element that shows the development level of national food science and technology as well as the economy. In this context, the food additives in question should not hide the mistakes in the processing and production of the food, should not reduce the nutritive properties and should not deceive the consumer.Although the benefits of the use of food additives to the food industry are an undeniable fact, their effects on human health are still a matter of debate. There are studies reporting the relationship between processed foods and adverse health outcomes caused by processed foods in various populations around the world, particularly in cardiovascular diseases and autoimmune disorders caused by immune cells, some types of cancer, metabolic diseases such as type 2 DM and obesity.In this study, the effects of food additives on human health, features such as daily usage amounts, international institutions such as FAO, WHO and JECFA, their regulations and controls are examined and information about being a conscious consumer is mentioned.
