Gamma-oryzanol

Öz

Gamma-oryzanol is an important bioactive compound, and its main source is rice bran. In this study, the chemical structure, sources, physiological effects, uses and toxicity of gamma-oryzanol, the methods of its determination and effect of processing on gamma-oryzanol were reviewed
