Food Safety Practices and Personnel Hygiene Perception of Hotels in Kusadasi and Selcuk Regions: A Multi-Centre Study

Objective: The hygienic quality of food services in tourism establishments directly influences customer satisfaction and public health, largely depending on staff’s hygiene knowledge and practices. This study aimed to assess food safety practices and evaluate hygiene perception among hotel food service personnel in the Kuşadası and Selçuk regions of Türkiye.
Method: This descriptive study was conducted between February and May 2019 in 13 hotels (11 in Kuşadası and 2 in Selçuk) with a total of 104 food service employees. Data were collected through face-to-face interviews using a questionnaire on socio-demographic characteristics, the “Hygiene Perception Scale,” and the “Food Safety Practices Evaluation List.”
Results: The majority of the participants were male (72.1%) and employed as cooks or chefs (56.7%), with a mean age of 35.9±10.4 years and 11.1±9.4 years of experience. Nearly all (95.2%) held a hygiene certificate. The overall hygiene perception score was 149.64±11.61 (success rate: 80.5%), including food hygiene (success rate: 81.4%), personal hygiene (success rate: 84.6%), and kitchen and equipment hygiene (success rate: 72.0%). Hygiene perception did not differ significantly by gender or education level (p>0.05). Work experience was positively associated with kitchen and equipment hygiene perception (rho=0.200, p=0.042), and possession of a hygiene certificate correlated with higher perception scores (p<0.05). The mean food safety practice score of the hotels was 80.5±10.5. Most staff wore clean uniforms (92.3%) and changed gloves when necessary (76.9%), though handwashing frequency was insufficient (53.8%).
Conclusion: Hotel kitchen staff in this key tourism region demonstrated strong food safety and hygiene awareness. Regular inspections and continuous training are recommended to sustain optimal hygiene practices.
