GIDA TEDARIK ZINCIRLERINDE TEDARIKÇI KALITE PROBLEMLERI ANALIZI: TÜRKIYE ÖRNEĞI

Öz

Gıda tedarik zincirlerinde, üretimin ve kalitenin sürdürülebilirliği dünya genelinde yıllardır tartışma konusudur. Son yıllarda gıda ürünlerinde kaliteye ve güvenliğe ilişkin problemlerin dikkat çektiği ülkelerden biri de Türkiye’dir. Bu sebeple çalışmada son beş yılda ülkelerin Gıda ve Yem için Hızlı Alarm Sistemi (Rapid Alert System for Food and Feed) üzerinden Türkiye menşeli ürünler için yapmış oldukları bildirimler kullanılarak, tedarikçi konumunda bulunan Türkiye’nin, müşterisi konumunda bulunan sisteme üye ülkelere gönderdiği ürünlerde meydana gelen kalite problemleri analiz edilmiştir. Çalışmada, bildirimler müşteri şikâyeti olarak değerlendirilmiştir. Öncelikle son beş yılda gıda ürünlerindeki tüm bildirimler ele alınarak genel durum hakkında çıkarımlar yapılmıştır. Sınır reddi bildirimleri detaylı olarak analiz edilmiştir. Çalışma sonuçları incelendiğinde, her yıl için sınır reddi bildirimlerinin %61’in üzerinde olduğu görülmüştür. Son beş yılda en çok problemin yaşandığı ürün gruplarının meyveler ve sebzeler, sert kabuklu yemişler ve tohumlar, otlar ve baharatlar olduğu ortaya çıkmıştır. Pareto Analizi sonuçları incelendiğinde ürünlerin sınırda iade edilmesine sebep olan faktörlerin %89,64’lük bölümünün ürünlerdeki pestisit kalıntıları ve mikotoksinlerin oluşturduğu görülmüştür. Çalışmada, kalite problemlerinin çözümüne yönelik öneriler tedarikçi ülke ve tedarik zinciri üyeleri bazında açıklanmıştır.

THE ANALYSIS OF SUPPLIER QUALITY PROBLEMS IN FOOD SUPPLY CHAINS: AN ANALYSIS OF TÜRKIYE

Öz

The sustainability of production and quality in food supply chains has been a subject of debate worldwide for years. One of the countries where quality and safety problems in food products have drawn attention is Türkiye in recent years. Therefore, this study analyzes the occurred problems in the food products that Türkiye, as a supplier, distributes to the member countries, which are the customers of its own, using the notifications made by the countries through the Rapid Alert System for Food and Feed for products that have originated from Türkiye in the last five years. In the study, notifications were viewed as customer complaints. First of all, all notifications of food products in the last five years were analyzed and the general situation inferences were made as well. Subsequently, the border rejection notifications were scrutinized. It was observed that the number of border rejection notifications was over 61% per year in the results of the scrutinized study. The product groups with the most problems in the last five years were fruits and vegetables, nuts and seeds, herbs and spices. 89.64% of the factors causing the products not to have gone through the border were pesticide residues and mycotoxins in the products when the results of Pareto Analysis were examined. In the study, suggestions for the solution of quality problems are clarified on the basis of supplier country and supply chain members.
