Marmara Bölgesinin Çeşitli Yörelerinde Yetiştirilen Williams Armut Çeşidinin Yöresel Olgunluk Standartlarının ve Depolama Sürelerinin Saptanması

Öz

1978 yılında başlayan ve üç yıl süre ile devam eden çalışmalar sonunda Marmara Bölgesinde Bursa ve Yalova yörelerinde yetiştirilen Williams armudunun yöresel hasat olumu, depolama kapasiteleri ve ye me olumu özellikleri; sertlik (Meyve eti sertliği), suda eriyebilir maddeler, renk (zemin rengi), pH, asitlik ve tadım testlerine göre incelenmiştir. 21 günlük hasat zamanı boyunca meyvelerde büyüme %50 kadar artmış buna mukabil meyve dökümü de hızlanmıştır. Nişasta (iyot) testi basit olarak hasat zamanını tespit açısından ülke koşullan için uygun bulunmuş ve uzun süreli depolama istendiğinde meyvelerin 20-21 Ib sertlikte, fakat kısa süreli depolama açısından 67-18 Ib, sertlikte toplanmalarının uygun olacağı saptanmıştır. Bu değerler dışında meyvelerin depo yanıklığı ve çekirdek evi çürümesine duyarlılıkları artış göstermiştir. Meyvelerde 3 ay sonunda izlenen su kaybı %5’i bulmuş, ufak meyvelerde ise bu değer %8’e kadar ulaşmıştır.

Regional Maturity Standards and Storage Potentials of Williams Pears Grown in Different Areas of Marmara Region

Abstract

Starting in 1978 three consecutive years of studies were conducted to find out maturity, storage, and ripening characteristics of Williams pears grown in Bursa and Yalova. Evaluations were based on fruit firmness, soluble solids (S.S.), color change, pH, titratable acidity and sensory evaluation. The fruits were found to increase as much as 50% in 21 days which was the period of harvest season. Starch (iodine) test was found to be of practical importance for determining maturity especially of extortionist and grower’s interest. If long term storage of three months intended, fruits at 20-21 lb firmness are suitable for both localities, otherwise 17-18 lb fruit firmness would yield fruits of better quality but with less storage potentials. Outside this range fruits are prone to either scald or core breakdown during storage in time. Fruits showed a water loss of 5% in the end of three-month storage. Smaller fruits suffered more.
