Toklularda Karayolu ile Taşımanın Bazı Hematolojik ve Biyokimyasal Parametreler Üzerine Etkisi

Öz

Bu çalışmada Kayseri’de lokal olarak üretilen ve açıkta satışa sunulan peynir çeşitlerinde L. monocytogenesvarlığını ortaya koymak amaçlanmıştır. Çalışma kapsamında toplam 50 adet lokal peynir örneği ISO 11290-1/A12004’da önerilen Listeria izolasyon prosedürüne göre analiz edilmiştir. Materyaller çiğ sütten üretilen peynirler (29/50)ve ısı işlemi görmüş (21/50) peynirlerden oluşmuştur. Çiğ sütten üretilen peynirlerin L. monocytogenes ilekontaminasyon oranının (5/29) (%17.2), ısı işlemi görmüş peynirlerden (2/21) (%9.5) daha yüksek olduğu ortayakonulmuştur. L. monocytogenes ile kontaminasyon oranı açısından en yüksek oran çömlek peynirlerinde (5/22 ve %22.7) bulunurken bunu lor (1/5 ve %20) ve tel peynirleri (1/7 ve %14.2) takip etmiştir. Öte yandan toplanan çökelek veköy tipi tuzlu kalıp peynirlerinde L. monocytogenes bulunamamıştır. Çalışmada elde edilen verilere göre, Kayseripazarlarında açıkta satılan, gerek çiğ sütten yapılarak tüketime sunulan ve gerekse de ısı işlemi görmüş peynirlerin L.monocytogenes varlığı bakımından halk sağlığı açısından göz ardı edilmemesi gereken bir tehlike olduğu sonucunavarılmıştır
