Mahlab and Mahlab Products

Öz

Mahlab (Prunus mahaleb L.) grows as a wild plant in some region of Turkey including Tokat. In respect to the food industry flesh and seed of mahlab fruit are important. Mahlab puree, mahlab vine, mahlab flour and mahlab oil are produced from mahlab fruit. The mahlab seeds form an important source of protein and oil. It also draws attention for its phenolic compounds, tocopherols, minerals content and aroma compound. It is usually used in folk medicine because of its health promoting effects. This review summarizes the composition and physicochemical properties of mahlab seeds; mahlab products and its health effects.

Mahlep ve Mahlep Ürünleri

Öz

Mahlep (Prunus mahaleb L.) ülkemizde Tokat dahil birçok bölgede doğal olarak yetişmektedir. Gıda endüstrisi açısından mahlep meyvesinin etli kısmı ve çekirdeği (tohum) önemlidir. Mahlepten üretilen ürünler mahlep püresi, mahlep şarabı, mahlep unu ve mahlep yağıdır. Mahlep çekirdeği önemli bir protein ve yağ kaynağıdır. Ayrıca fenolik bileşikler, tokoferoller, mineral madde içeriği ve aroma bileşenleri ile de dikkat çekmektedir. Mahlep sağlığa yararlı bileşenleri nedeniyle geleneksel tedavi yöntemlerinde sıklıkla kullanılmaktadır. Bu derlemede mahlep tohumunun bileşimi ve fizikokimyasal özellikleri, mahlepten üretilen ürünler ve sağlık üzerine etkisi hakkında bilgi verilmiştir.
