Determination of Total Antioxidantand Phenolic Amount of Matured and Immature Corn Silk
Abstract
In this study, as an important bioactive source, potential use of corn silk extract as natural antioxidant, total antioxidant activity (AA) and phenol amount (FMM) in immature silk of dent corn and pop corn, the differences between these terms genotype and ripening conditions is aimed to be determined. In this study we have executed, total FMM was determined by the Folin-Ciocalteu method, the antioxidant activity was determined by DPPH radical reduction activity method. According to the analysis, FMM amount in the silk of dent corn (822.404 and 713.507 mg GAE g-1), was significantly higher than local pop corn silk (311.072 and 433.936 mg GAE g-1). However, FMM amount with 684.717 mg GAE g-1, the matured silk of the local pop corn with the red kernel has a closer FMM amount with the silk of dent corn. In the AA analysis, butylated-hydroxytoluene’s (BHT) IC50 value is determined as 225.63 mg ml-1, we used as the Standard synthetic antioxidant. In the data of the research materials, hybrid dent corn data (381.51 and 403.47 mg ml-1) is high, local pop corn data (661.29 and 687 mg ml-1) was observed to be low. Considering the situation of corn silk maturation, matured silk has higher values (P>0.005) but statistically were not significant.
