Karachay-Balkar Cookery: Culinary Traditions and Table Etiquette

Öz

The Article is devoted to the study of Karachay-Balkar culinary traditions and table etiquette. The authors are come to the conclusion that the body cooking techniques, rules of table etiquette and culinary specialities are determined by national socio-economic, class, cultural, natural and climatic conditions of people, as well as his religious outlook and sacred rites. Notes the identity of the Karachay-Balkar cookery, historically ascending to the Alano-Khazar culinary traditions of the Middle ages. The article outlines the main types of national cuisine, technology of heat treatment, the kits of the ingredients used and the types of traditional foods, as well as some of the rules of table etiquette and culinary Karachay-Balkar.
