Cold Storage of Pomegranate Arils Treated with Ozone Gas

This study was performed to determine the effects of ozone treatment and different packaging materials on the storage life and quality of Hicaznar pomegranate. After optimum harvest, pomegranates were transferred to laboratory immediately and were precooled by using forced air at 1 °C temperature (within 6 hours). After precooling, fruit were dipped into sodium hypochlorite solution (200 ppm) during 10 s. Arils of fruit were hand-separated and divided into four groups. 1-Plastic boxes: Arils were packaged into plastic boxes as control group. 2- Plastic boxes+Ozone: Arils exposed to ozone in sterile and gas tight cabinet were placed into plastic boxes. 3- Vacuum bags: Arils were vacuumed in bags without ozone treatment. 4- Vacuum bag+ Ozone: Arils exposed to ozone in sterile and gas tight cabinet were vacuumed in bags. After treatments all samples were stored at 2 °C and 90± 5 % relative humidity during 20 days. Weight losses of arils treated with ozone were lower than control group but their sensory quality losses (taste and color) were higher than those of non-ozonated arils. Vacuumed arils had higher external appearance scores compared to other samples. Non-ozonated arils of Hicaznar pomegranate could be stored up to 10-12 days but ozone treated ones only 8 days at 2 °C and 90± 5 % relative humidity.
