FROM PLATES TO MINDS: THE CONCEPTUAL WORLD OF GASTRONOMY STUDENTS

Öz

Eating, or nourishment, is the most fundamental human need after breathing. However, throughout cultural and historical development, food has come to represent much more than sustenance; it has emerged as a crucial factor in both the construction and the dissolution of societies. Within this context, uncovering the perceptions of Gastronomy and Culinary Arts students—who will prepare the foods that may shape culture from past to future—through metaphors has become increasingly important. This study focuses on students enrolled in both public and foundation universities in Mersin, Turkey. The findings indicate that gastronomy plays a significant role in shaping students’ identity formation, emotional attachment, and intellectual development processes. Moreover, the most frequently used metaphors to reflect students’ perceptions of gastronomy were derived from artistic and cultural elements.
