SEBZELERDE ETİLENİN ÖNEMİ ve 1-METİLSİKLOPROPEN (1-MCP)’İN KULLANIMI

Öz

Sebzeler; özellikle içerdikleri vitamin, mineral ve lifli maddeler ile insan beslenmesinde günlük olarak alınması
gerekli önemli besin maddeleridir. Özellikle sebzelerde bulunan antioksidan maddelerin, kanser hastalığına karşı koruyucu etkisinden dolayı günümüzde önemleri daha da artmıştır. Sebzelerin hasattan sonraki ömürleri kök ve yumru sebzeler dışında oldukça kısadır. Bu sürenin azlığında sebzelerin ürettikleri etilenin yanında, bulundukları ortamdaki etilen kaynakları da etkilidir. Dolayısıyla sebzelerin raf ömrünü uzatmada etilenin etkisinin azaltılması gereklidir. Bu amaçla soğuk depolama, ambalajlama, kontrollü atmosfer depolama ve modifiye atmosferde depolama gibi değişik depolama teknikleri kullanılmakla birlikte, bu tekniklerin etkileri de çoğu zaman sınırlı kalmaktadır. Son yıllarda geliştirilmiş olan 1-metilsiklopropen (1-MCP), ürünlerde etilen bağlanma noktalarına bağlanarak, etilenin etkisini azaltabilmektedir. Bu çalışmada, sebzelerin etilen
üretimleri ve 1-MCP’in sebzelerdeki kullanılabilirliği incelenmiştir.
