Slaughter and Carcass Characteristics of Some Fat Tailed and Thin Tailed Native Sheep

This research was carried out to compare the fattening performance and carcass traits of fat-tailed Akkaraman and Dağlıç and thin tailed Kıvırcık and Merino and mid-fat tailed Malya sheep breeds. In this research, a total of 50 lambs were used and each genotype group was consisted of 10 male lambs about 2 ½ months of age of which beginning live weight averaged 20 kg. They were fed up with ad libitum concetrated feed and given 150 g/day alfalfa to each animal for a fattening period of 68 days. Slaughter weight, cold carcass weight, dressing percantages, tail ratios and kidney-pelvic fat ratios which were statistically significant traits were found as 40.92 kg, 18.84 kg, 45.98 %, 16.16 % and 0.69 % for Akkaraman; 36.04 kg, 17.35 kg, 48.03 %, 18.97 % and 0.71 % for Dağlıç; 34.09 kg, 15.35 kg, 45.23 %, 0.88 % and 1.95 % for Kıvırcık; 40,59 kg, 18.55 kg, 45.69 %, 5.74 % and 1.06 % for Malya; 38.94 kg, 17.26 kg, 44.35 %, 0.61 % and 1.08 % for Me-rino respectively. Weight of cold left carcass, leg, back-loin, shoulder, flank and eye muscle area were found as 8.02 kg, 2.96 kg, 1.67 kg, 1.53 kg, 720 g and 14.2 cm2 for Akkaraman; 7.24 kg, 2.56 kg, 1.63 kg, 1.24 kg, 745 g and 13.1 cm2 for Dağlıç; 7.73 kg, 2.62 kg, 1.68 kg, 1.51 kg, 751 g and 13.1 cm2 for Kıvırcık; 8.69 kg, 3.10 kg, 1.88 kg, 1.68 kg, 874 g and 13.9 cm2 for Malya; 8.53 kg, 3.02 kg, 1.81 kg, 1.68 kg, 827 g and 16.4 cm2 for Merino respectively. When we no-ticed the carcas component ratios, there is only significant difference in shoulder ratio between breeds (p<0.01). By the cutlet sample analyses lean, bone, subcutaneous fat, intermuscular fat and reaming parts ratios 49.5 %, 27.2 %, 16.1 %, 2.6 % and 3.9 % for Akkaraman; 46.4 %, 25.7 %, 19.2 %, 4.8 % and 2.4 % for Dağlıç; 43.8 %, 23.9 %, 10.9 %, 17.0 % and 2.4 % for Kıvırcık; 46.7 %, 22.6 %, 21.0 %, 5.6 % and 2.9 % for Malya; 46.2 % 26.2, 13.1 % %, 11.0 % and 2.8 % for Merino respectively. The differences between groups for bone and intermuscular fat ratios (p<0.05), and subcutaneous fat ratios (p<0.01) were found statistically significant.
