Exploring the Association between Nutrition Literacy and Health Outcomes: Insights from a Bibliometric Analysis

Objective: The rising prevalence of chronic diseases and their burden on healthcare systems highlights the critical need to understand how nutrition literacy relates to health outcomes. This study aimed to explore emerging themes and interactions at the intersection of nutrition literacy and health outcomes.
Methods: This study examines this association by identifying key themes and analyzing their interconnections through a comprehensive bibliometric analysis of 51 scientific publications from the Web of Science database. The research methodology employed scientific mapping techniques to visualize and interpret the data, presenting descriptive findings through frequency analyses and bar plots. Trend themes and their interactions were derived from this scientific mapping approach, with thematic diagrams helping to identify key areas within the field.
Results: The study revealed that the United States, Ghana, and Indonesia are leading contributors to this research domain, with the Mayo Clinic emerging as a notable research institution. The fields of nutrition and dietetics, alongside public health, dominated the scientific exploration of links between nutrition literacy and health outcomes. The analysis identified three predominant themes: health, education, and behavior. The findings strongly suggest that higher levels of nutrition literacy promote healthier dietary behaviors, which in turn lead to better health outcomes.
Conclusion: Nutrition literacy is a crucial factor in improving overall health outcomes. The study's insights are expected to make valuable contributions to public health policies and educational interventions.

Since this bibliometric analysis is based on a literature review, ethical approval was not required. Nevertheless, the study adhered to ethical principles, ensuring proper citation and respect for copyright. No research or data collection involving humans or animals was conducted. The methodology and limitations have been clearly outlined, and the results are presented impartially. The manuscript was solely authored by the researchers.
