Lipid Health Index Assessment Of Carp (Cyprinus carpio Linnaeus, 1758) In Birecik Dam Lake

Öz

Numerous studies on the beneficial effects of omega-3 fatty acids—specifically eicosapentaenoic acid (EPA), docosahexaenoic acid (DHA), atherogenicity (AI), and thrombogenicity indices (TI)—on human health have been conducted. The fatty acid profiles and meat quality indices of commercial carp (Cyprinus carpio Linnaeus, 1758) purchased from fish stalls in Birecik, Şanlıurfa, were determined. In addition to the health indices AI and TI, lipid quality parameters such as the HH ratio, which evaluates cholesterol metabolism, and the HPI, which promotes health, were also examined. The H/H, HPI, AI, TI, and nutritional value index (NVI) of the samples are determined as 2.36, 2.86, 0.45, 0.41, and 1.69, respectively. The omega-3/n-6 ratio is determined to be 1.33. This study aims to determine the lipid quality and health-related indices of common carp (C. carpio) were collected, in the context of human nutrition.
