Vejetaryen Beslenme ve Sağlık Üzerine Etkileri

Öz

Vejetaryenler et ya da hayvansal kaynaklı gıdaları hiç tüketmeyen ya da sınırlı olarak tüketen kişiler olarak tanımlanmaktadır. Vejetaryen beslenme biçimleri lakto vejetaryen, ovo vejetaryen, lakto-ovo vejetaryen, vegan vb. olarak sınıflandırılabilmektedir. Vejetaryen beslenmesi genellikle beden kütle indeksi, toplam serum ve kolesterol seviyesi ile tansiyonun daha düşük olmasını sağlayarak kalp hastalıkları, hipertansiyon, felç, tip 2 diyabet ve belirli kanser türlerinin vejetaryen olmayanlara kıyasla daha az gözlenmesine neden olmaktadır. Bununla birlikte, vejetaryenlerin sağlığın korunması ve bazı kronik hastalıkların risklerinin azaltılması için tek tip beslenme sonucu eksiklikleri belirlenen vitamin B12, vit D, ω-3 yağ asitleri, kalsiyum, demir ve çinkoyu diyetlerinde yeterli miktarda almaları gerekmektedir. Bu derlemede vejetaryen beslenme şekillerinin sağlığa olan etkileri incelenmiştir.
