The aim of this study is to use the response-surface method for the highest yield oil extraction using the suitable solvent, solid/liquid ratio and extraction duration parameters, which are thought to affect oil yield from hazelnut skin. The conditions that provide the highest efficiency oil extraction were chosen as chloroform, solids/solvent ratio 0.01 g/ml and extraction duration as 5 hours. In the extracted oil, the total amount of phenolic compound was found as 108.819 mg GAE/L, the DPPH radical scavenging activity was 264.557 mg Trolox/L and the K232 value was 3.698, the K270 value was 3.296, the p-Anisidin value was 2.543 and the b * (yellowness) value was 14.7. Hazelnut skin contains components that are beneficial for health. In addition, it is an economically valuable raw material by converting a product considered as waste into another product with high added value.
