Abstract

Salamurada işlenen çiçek tomurcukları çeşni katkısı olarak kullanılan kaparinin bitkisel özellikleri, tarihçesi, tarımı, ürün muhafaza ve hazırlama işlemleri, kullanımı, bileşim ve besin değeri, yeni işleme teknolojisi çalışmaları ve Türkiye’deki durumu derlenmiştir.
