Abstract

Listeria monocytogenes çevrede oldukça yaygın olarak bulunan bir etkendir. Gıda zincirinde gıda maddelerinin kontaminasyonu ile mutfağa, dolayısıyla insanlara bulaşması nedeniyle dünya gıda endüstrisini yakından ilgilendiren önemli bir sorundur. Bu makalede, Türkiye’de oldukça geniş tüketim sahasına sahip, dış etkenlerden kolayca kontamine olabilen ve çoğu mikroorganizmanın gelişmesi için uygun bir ortam olan sütlerin ve bir süt ürünü olan peynirlerin L. monocytogenes ile kontaminasyonu değerlendirilmiştir.

The Presence and Importance of Listeria Monocytogenes in Milk and Cheese (Turkish with English Abstract)

Abstract

Listeria monocytogenes, is factor which is fairly widespread in the environment. It is an important problem for world food industry due to pass by contagion to human being from kitchen by contamination of foods in food chain. In this article, it is mentioned that the contamination of L. monocytogenes with milk and cheese that is a product of milk having a wide consumption area and being easily contaminated by outside factor and a suitable medium for growing up of many microorganisms.
