FUSARIUM TOKSİNLERİ

Abstract

Mikotoksinler, Aspergillus, Penicillium, Fusarium ve Alternaria spp. başta olmak üzere, patojenik ve bozulma etmeni olan küfler tarafından üretilen ikincil metabolizma ürünleridir. Aspergillus ve Penicillium cinsi küfler genelde kurutma ve depolama aşamalarında sorun yaratırken, Fusarium ve Alternaria türleri ürüne hasat öncesi veya hasat sırasında kontamine olmaktadır. Bitki patojeni olarak bilinen
Fusarium cinsine ait küfler tarla koşullarında özellikle buğday, arpa, yulaf, mısır gibi tahıl ürünlerinde gelişerek sorun yaratmaktadırlar. Fusarium cinsi küfler tarafından üretilen mikotoksinler içerisinde, halk sağlığı yönünden yarattığı problemler nedeniyle trikotesenler, zearalenone, moniliformin
ve fumonisinler büyük önem taşımaktadır. Bu derlemede, mikotoksijenik aktiviteye sahip olan Fusarium türleri, ürettikleri mikotoksinler, Fusarium toksinleri açısından riskli olan gıda maddeleri, Fusarium toksinlerinin oluşumu için gerekli olan fizyolojik faktörler ve Fusarium kontaminasyonunu önlemek amacıyla yapılabilecek hasat öncesi ve hasat sonrası uygulamalar tartışılmaktadır.
