RUMENDE LİPİT METABOLİZMASI

Abstract

Büyük bir indirgeme (redüsiyon) ortamı olan rumende rasyonla alınan yağlar da indirgenirler. Yağlardaki inirgeme, mikroorganizmaların enzimleri tarafından önce hidroliz sonrada hidrolize sonucu açığa çıkan doymamış serbest yağ asitlerini hidrojenleştirme şeklindedir ki bu son olaya yağların
biyohidrogenasyonu adı verilir. Biyohidrojenasyonun gerçekleşmesi için önce yağlar hidrolize olmak zorundadır. Rumende biyohidrojenasyondan sorumlu bakteriler selülolitik özelliktedir ve düşük rumen pH sında aktiviteleri azalmaktadır. Linoleik asidin biyohidrojenasyonundaki ara ürünlerinden konjuge linoleik asidin (CLA) insan sağlığına önemli etkileri mevcuttur.
