It is aimed to determine the local product consumption and some factors affecting consumption of the individuals in Tokat province which are rich in terms of local products. In order to reach this aim, 272 individuals were interviewed by proportional sampling method. The most known and most consumed products are the products respectively; Tokat tomato (95.96%), Tokat pepper (90.07%), Tokat leaf (73.90%), Tokat cherry (64.49%), rosehip (62.13%) and Tokat citrus grape (60.66%) respectively. In the research, binary logit analysis was used to determine the factors affecting individuals' level of consciousness in purchasing local products. As a result of the analysis, the factors that affect the level of awareness of individuals in local product purchases are as follows; the immigration of individuals to the region, their substitution in the region for more than 5 years, the availability of the product is easy and the appeal of the product, the taste of the product, its contribution to the economy of the region and the number of individuals living in the household.As a result of the research, it is understood that local people consumption of local products is high and consumption is not a statistical effect of socio-demographic characteristics, but factors such as completely habitual taste are effective.
