İzmir’de Michelin Rehberi Bib Gourmand Listesinde Yer Alan Restoranların Tripadvisor Yorumlarının Değerlendirilmesi

İzmir Türkiye’de Michelin Rehberine dâhil olan önemli şehirlerden biridir. Bu araştırmada İzmir ilinde bulunan Michelin Rehberi Bib Gourmand listesinde yer alan restoranların Tripadvisor yorumlarının incelenmesi amaçlanmıştır. Araştırmada söz konusu restoranlara ait son 3 yılda yapılmış olan 184 adet Tripadvisor yorumu nitel içerik analizi tekniği ile analiz edilmiştir. Yorumların içerik analizleri sonucunda memnuniyetler ve şikâyetler isminde iki farklı tema belirlenmiştir. Her bir tema yiyecek/içecek, hizmet/çalışanlar, fiziksel ortam, menü, temizlik/hijyen, fiyat/eder ve diğer gibi kategoriler oluşmakta olup, ayrıca her bir kategori de birbirinden faklı kodlardan oluşmaktadır. Analiz edilen Tripadvisor yorumları değerlendirildiğinde; restoranların önemli bir kısmının son 3 yıldır aldıkları puanların genel puanlarından daha düşük olduğu belirlenmiştir. Ayrıca analizler sonucunda müşterilerin yemeklerin lezzetli ve özenli olduğunu sıklıkla tekrarladıkları belirlenmiştir. Yemeklerin lezzetli olması kadar görüş birliği olmasa da yorumlarda işletme çalışanlarının güler yüzlü, samimi, ilgili ve kibar olduğu; atmosferin dikkat çekici ve mekânların ferah olduğu yorumlarda tekrarlanmıştır. Yemeklerin lezzetli olduğunu düşünenler kadar olmasa da yemeklerin lezzetsiz, sunumların özensiz olduğu da yorumlarda tekrarlanmıştır. İşletme çalışanlarına yönelik olumlu görüşten daha çok olumsuz görüş birliği olduğu; çalışanların ilgisiz, kaba/egolu ve asık suratlı oldukları yoğun bir şekilde tekrarlanmıştır. Müşterilerin bir kısmı İşletmelerin uyguladıkları fiyat politikasının hizmete göre kabul edilebilir seviyede olduğunu düşünmesine karşın, fiyatların fahiş olduğu daha sık bir şekilde tekrarlanmıştır.

Izmir is one of the important cities in Türkiye included in the Michelin Guide. This study aims to examine the Tripadvisor reviews of restaurants in Izmir that are listed in the Michelin Guide Bib Gourmand. In this study, 184 Tripadvisor reviews made in the last 3 years for the restaurants in question were analyzed using qualitative content analysis. As a result of the content analysis of the reviews, two different themes were identified: satisfaction and complaints. Each theme consists of categories such as food/beverage, service/staff, physical environment, menu, cleanliness/hygiene, price/value, and others, and each category also consists of different codes. When the analyzed Tripadvisor reviews were evaluated, it was determined that a significant portion of restaurants had received scores lower than their overall scores over the past three years. Furthermore, the analysis revealed that customers frequently mentioned that the food was delicious and carefully prepared. Although there is no consensus on the deliciousness of the food, the reviews repeatedly mention that the staff are friendly, sincere, attentive, and polite; the atmosphere is appealing, and the premises are spacious. While not as many people commented that the food was delicious, it was repeatedly mentioned that the food was tasteless and the presentation was careless. There was more consensus on negative opinions about the staff than positive ones; it was repeatedly stated that the staff were indifferent, rude/arrogant, and sullen. While some customers think the pricing policy implemented by the businesses is acceptable given the service, the prices being exorbitant has been mentioned more frequently.
