Investigation of Listeria monocytogenes Presence in Seafood Retail Markets

Abstract

Listeria monocytogenes is an important food-borne pathogen and is widely found in nature. Many industrialized countries are concerned about the presence of this pathogen in food, especially in ready-to-eat foods. Seafood is also among food sources that can contain L. monocytogenes. In this study, the presence of L. monocytogenes was investigated by collecting samples from fresh or cooked (ready-to-eat) products in different aquaculture retail areas. The samples were collected from four different samples (bench, employees' hands, cleaned and cooked seafood) in three different retail areas, one in autumn, winter, spring and summer seasons. The presence of L. monocytogenes was investigated in the samples brought to the microbiology laboratory and, if detected, the species was confirmed. There was no intense L. monicytogenes in the samples. In the autumn samples, in two of the three enterprises, samples taken by swap method from the cleaning bench were detected. However, L. monocytogenes was not detected in samples taken from cleaned (prepared for cooking / sale) seafood and samples from cooked (ready for consumption) seafood. L. monocytogenes could not be detected in winter, spring and summer samples.

Su Ürünleri Perakende Satış Alanlarında Listeria monocytogenes Varlığının Aranması

Abstract

Listeria monocytogenes gıda yoluyla bulaşan önemli bir patojendir ve doğada yaygın olarak bulunmaktadır. Birçok endüstrileşmiş ülke bu patojenin gıdalarda, özellikle de tüketime hazır gıdalarda bulunması ile ilgili olarak endişe duymaktadırlar. Su ürünleri de Listeria monocytogenes içerebilen gıda kaynakları arasında yer almaktadır. Bu çalışmada, farklı su ürünleri perakende satış alanlarındaki ortam ve taze ya da pişirilmiş (tüketime hazır) ürünlerden örnek toplanarak Listeria monocytogenes varlığı araştırılmıştır. Örneklemeler sonbahar, kış, ilkbahar ve yaz mevsimlerinde 1’er kez olmak üzere üç farklı perakende satış alanında dört farklı örnekten (tezgah, çalışanların ellerinden, temizlenmiş ve pişirilmiş su ürününden ) yapılmıştır. Mikrobiyoloji laboratuvarına getirilen örneklerde Listeria monocytogenes varlığı araştırılmış ve tespit edilmesi halinde tür doğrulaması yapılmıştır. Yapılan örneklemelerde yoğun bir Listeria monocytogenes varlığına rastlanmamıştır. Sonbahar örneklemelerinde üç işletmenin ikisinde temizleme tezgahından swap yöntemiyle alınan örneklerde Listeria monocytogenes tespit edilmiştir. Bununla birlikte, temizlenmiş (pişirmeye/satışa hazırlanmış) su ürünlerinden alınan örneklerde ve pişirilmiş (tüketime hazır) su ürünlerinden alınan örneklerde de Listeria monocytogenes tespit edilmemiştir. Kış, ilkbahar ve yaz örneklemelerinde her üç işletmeden alınan örneklerde Listeria monocytogenes varlığı tespit edilememiştir.
