Sokak lezzetleri, şehirlerin kültürel değerlerini yansıtan, şehir dokusuyla özdeşleşmiş yiyeceklerin sokakta sunulmasını ifade etmektedir. Yiyecek neofobisi ise yiyecekte yenilik korkusunu ifade eden bir kavramdır. Bu bağlamda yapılan çalışmanın amacı Mersin’e ziyarete gelen yerli turistlerin yiyecek neofobi düzeylerini ölçmek, yiyecek neofobi düzeylerinin demografik değişkenlere göre farklılaşma durumunu incelemek bununla birlikte Mersin’de sunulan sokak lezzetlerinden hangilerini tüketmeyi tercih etmeyeceklerini belirlemektir. Bu amaç doğrultusunda toplamda 315 katılımcından anket vasıtası ile veri elde edilmiştir. Veriler istatistik paket programa aktarılarak analizlere tabi tutulmuştur. Analiz sonuçlarına göre katılımcıların büyük çoğunluğu yiyecek neofobisine karşı nötr tutum sergilerken; bir kısmı yiyecek neofobisine sahip olarak tespit edilmiştir. Katılımcıların yiyecek neofobisinin cinsiyet ve eğitim düzeylerine göre farklılaştığı belirlenmiştir. Araştırma sonunda Mersin sokak lezzetlerine karşı neofobinin aşılabilmesi adına önerilerde bulunulmuştur.
Street foods refer to the food that reflects the cultural values of the cities and is identified with the urban texture. Food neophobia is a concept expressing the fear of innovation in food. The purpose of the study conducted in this context is to measure the food neophobia levels of the local tourists visiting Mersin, to examine the differentiation of the food neophobia levels according to demographic variables, and to determine which of the street foods offered in Mersin they would not prefer to consume. For this purpose, data was obtained from 315 participants in total through a questionnaire. The data were transferred to the statistical package program and subjected to analysis. According to the results of the analysis, while the majority of the participants displayed a neutral attitude towards food neophobia; some of them were found to have food neophobia. It was determined that the food neophobia of the participants differed according to their gender and education level. At the end of the research, suggestions were made to overcome the neophobia against Mersin street foods.
