In this study, food consumption demands and consumer behaviors of urban
inland households in Isparta province were analyzed. In the survey,
socio-economic characteristics, total consumption expenditures, food
expenditures, incomes of households in the urban area of Isparta province were
determined. Consumption expenditures and elasticities of food products are
calculated with Working-Leser model. In the study, the data obtained from the
questionnaires conducted by face to face interview with 240 households in
Isparta city center were used. In the survey, the households were divided into
5 equal groups by 20%, in order of small to large according to their total
income. According to the results of the research, average household size is
3.41 persons and average household income is 4.430 TL/month. The share of food
expenditures in total expenditure was found to be 28.76%. According to the
calculations made, income elasticity the highest expenditure group was
entertainment and culture expenditures with 0.983 while income elasticity the
lowest expenditure group was health expenditure with 0.030. The income
elasticity of food expenditures was calculated as 0.382. The lowest income
elasticity in the food sub-groups was 0.203 with bread and cereals, while the
highest income elasticity was 0.524 with other food products. In the survey,
the Lorenz curve was drawn by calculating the share of income groups in total
income. According to this calculation, the lowest income group, the first 20%
group, received a share of 6.49% of total income and the fifth 20% group with
the highest income had a share of 40.26%. According to the results, the share
of food expenditures allocated by the households in urban areas in Isparta province
was higher than the average value in Turkey.
