Antimicrobial Efficacy of Lemongrass Oil-Loaded Electrospun PCL/Gelatin Nanofibers for Active Packaging of Fresh Chicken Breast

Öz

Objective: This study aimed to evaluate the inhibitory effect of electrospun polycaprolactone/ gelatin (PCL/Gt) nanofibers functionalized with lemongrass essential oil (LEO) against Salmonella Typhimurium in fresh chicken breast during refrigerated storage, and to assess their potential to preserve physicochemical quality over a 7-day shelf life. Materials and Methods: Fresh chicken breast samples were cut into approximately 10 g portions, washed with sterile deionized water, and surface-inoculated with 10 µL of Salmonella Typhimurium (ATCC 14028). Samples were coated with LEO-loaded PCL/Gt nanofibers, while uncoated samples served as controls and were stored at 4°C for 7 days. Microbial counts (CFU/g) were determined on days 0, 1, 3, 5, and 7 using SS agar. Physicochemical analyses included pH measurement (Mettler Toledo MP220) and color parameters (L*, a*, b*, ΔE) using a Konica Minolta CR-400 colorimeter. Data were analyzed by ANOVA and Tukey’s test (p≤0.05). Results: Nanofiber-coated samples exhibited significant antimicrobial and quality-preserving effects. While Salmonella counts increased from 6.19 to 6.97 log CFU/g in the control group, they decreased from 6.24 to 4.77 log CFU/g in coated samples, corresponding to an approximate 1.47 log reduction. The pH rose to 6.83 in controls but remained relatively stable at 5.75 in coated samples. Similarly, color parameters showed less variation in nanofiber-treated samples. Conclusion: Electrospun PCL/Gt nanofibers containing LEO effectively inhibited Salmonella growth and maintained physicochemical quality, indicating their potential as a biodegradable active packaging material for extending the shelf life of fresh poultry products.
