Akkaraman Koyun Sütünün Mineral ve Yağ Asit Konsantrasyonlarının Belirlenmesi

Öz

Bu çalışmanın amacı literatürde üzerinde kapsamlı
çalışmalar yapılmamış Akkaraman koyun sütünün mineral ve yağ asidi
bileşenlerini karakterize etmektir. Bu amaçla, Türkiye’nin Muş bölgesinden
alınmış olan Akkaraman koyun sütü numunelerinin mineral ve yağ asidi
seviyeleri, sırasıyla ICP-OES ve GC cihazları kullanılarak belirlenmiştir.
Akkaraman koyun sütündeki ana elementler Mg 187.75 mg/L, Zn 5.57 mg/L, K
1084.62 mg/L, P 1539.75 mg/L ve Ca 2077.37 mg/L olarak belirlenmiştir. Toplam
doymuş yağ asidi (ΣSFA) oranı % 65.59,
çoklu doymamış yağ asidi (ΣPUFA) % 9.04
ve tekli doymamış yağ asidi (ΣMUFA) % 25.37 ve olarak bulunmuştur. Sonuçlarımıza göre, Akkaraman koyun sütü
mineral ve yağ asitleri yönünden zengin bileşenlere sahiptir.

Determination of Mineral and Fatty Acid Concentrations of Akkaraman Sheep’s Milk

Öz

The aim of this study is to characterize the
mineral and fatty composition of the Akkaraman sheep’s milk that has not been
comprehensively studied in the literature. For this purpose, the mineral and
fatty acid levels of the Akkaraman sheep’s milk samples that were taken from
Muş district of Turkey were determined by ICP-OES and GC respectively. Major
elements in the Akkaraman sheep’s milk were determined as Mg 187.75 mg/L, Zn
5.57 mg/L, K 1084.62 mg/L, P 1539.75 mg/L, and Ca 2077.37 mg/L. Proportions of
total fatty acids were found as saturated fatty acid (ΣSFA) 65.59 %, polyunsaturated fatty acid
(ΣPUFA) 9.04 %, and
monounsaturated fatty acid (ΣMUFA) 25.37 %. According to our results, Akkaraman
sheep's milk has rich components in terms of minerals and fatty acids.
