Whey and Opportunity of Evaluation Whey in Beverage Industry

Whey, cheese or casein production results in the precipitation of casein obtained translucent, greenish-yellow color is liquid protein source. Compounds of whey is similar to milk that it includes milk dry matter approximately one half, almost all of the lactose, a split of five proteins, in large part of B vitamins. Although, whey has % 0.5-1 low amount protein contents, these proteins are α-laktalbumine, β-laktaglobuline, serum albumin, globulin and these proteins transform whey as a precious product. One of the main problem in dairy industry couldn’t evaluated to whey. Producing beverages in whey is a alternative method to utilize whey. Various fruit juice, concentrate, pulps, nectars or syrup is used for increased taste of the production. In this research, features of whey and opportunity of evaluation whey in beverage industry is mentioned.
